Keep the base recipe, almond format, orange-blossom ingredient and process sheet fixed while comparing flavored-matcha directions.

A Spanish gelato manufacturer should approve orange-blossom almond flavored matcha in the finished frozen product, not in dry powder or warm liquid mix. Lock the dairy or plant-based base, almond format, orange-blossom ingredient, pasteurization route, ageing time, batch-freezer settings, overrun target, serving temperature and display or pack format before comparing samples. The approval record should connect flavor balance and matcha character to process handling, allergen information and the exact finished-product label reviewed by the responsible EU food business.

USE THIS GUIDE IF

  • Spanish gelato manufacturers, central production kitchens and frozen-dessert brands
  • R&D, quality and procurement teams validating a foodservice pan or prepacked retail format
  • Businesses with a defined base recipe, process route and path to commercial volume

NOT THE RIGHT ROUTE IF

  • A single shop seeking a few kilograms for manual blending
  • Teams that have not selected dairy, plant-based or another primary frozen-dessert base
  • Projects without a path to one metric ton per approved flavor

Define the gelato product before choosing a flavored-matcha direction

Start with the finished commercial format: a foodservice pan for a gelateria, a lidded retail tub, a plated dessert component or another clearly named frozen product. State the target portion, display or storage route, serving temperature, expected first volume and the people responsible for sensory, quality, operations and purchasing approval. Then describe the intended profile without hiding behind a flavor name: a restrained floral opening, toasted almond body, recognizable matcha through the finish and a sweetness level appropriate to the buyer's base.

The three aroma roles need a hierarchy. Orange blossom should act as a lifted top note rather than a perfumed blanket; almond can bridge the dairy or plant-fat body with roasted depth; matcha must retain enough tea identity to prevent the result becoming generic marzipan ice cream. XIAO TEA's role as a custom flavored matcha specialist is to match the tea base and flavor architecture to this named frozen application, then revise against the buyer's finished product. A catalogue supplier normally provides a powder grade; it does not automatically resolve the interaction between the chosen base, process and serving route.

Lock the base, almond format and orange-blossom ingredient

Use one controlled base for the first comparison. Record the dairy or plant-based system, sugar sources, total-solids target used by the buyer, stabilizer or emulsifier system, liquid addition order and any background vanilla, citrus or nut notes. These variables are part of the application matrix, not minor details. Changing the base between flavor samples makes it impossible to know whether the flavored matcha or the gelato recipe caused a difference in sweetness, bitterness, body or aroma release.

Define almond precisely. Almond paste, roasted pieces, a filtered nut preparation and an almond flavor system do not create the same texture or documentation task. Do the same for orange blossom: identify the exact ingredient, supplier specification, dose range selected by the buyer and point of addition. The project brief should not assume that a poetic name proves ingredient suitability. The responsible EU food business must check the complete ingredient system, intended use and supplier documentation before approving the finished formula.

Run one recorded path from dispersion to pasteurization, ageing and freezing

Create a process sheet before the first trial. Record batch size, premixing method, powder addition point, agitation equipment, time to full dispersion, pasteurization program used by the facility, cooling route, ageing time and temperature, and the point at which any heat-sensitive flavor component is added. This page does not prescribe a universal time or temperature; the manufacturer must use its validated food-safety process and equipment instructions. The purpose is to keep the comparison reproducible while only the planned flavored-matcha direction changes.

After ageing, record mix appearance, aroma and any visible settling before the batch freezer. Then log machine, load size, draw point, extraction temperature used by the operator and the buyer's overrun or yield measurement. A sample that tastes balanced in warm mix may become muted, sharper or differently aromatic after freezing. Those are observations to capture in the specific test, not promises that every dairy or plant-based system will behave the same way.

Approve after hardening, display and realistic serving—not at the freezer door

Score the preferred directions at fixed checkpoints chosen by the manufacturer: immediately after extraction, after the planned hardening or storage step, and during a realistic service or consumption test. Evaluate orange-blossom clarity, almond identity, matcha presence, sweetness balance, bitterness, texture, visible color and aftertaste. Keep the score sheet anchored to the approved base and process code so later discussions do not rely on a photograph of green color alone.

If the product will sit in a dipping cabinet, test the intended pan depth, display conditions and scooping interval. If it will be sold in a prepacked tub, test the intended fill, closure, hardening, frozen storage and serving instructions. These checks do not replace formal shelf-life, microbiological or packaging validation. They define whether the flavored-matcha direction remains suitable for the exact commercial route the buyer is proposing.

Connect Spain and EU label review to the complete finished product

Regulation (EU) No 1169/2011 governs food information provided to consumers, and the European Commission explains that prepacked foods require information such as the food name, ingredients, highlighted allergens, net quantity, date marking and relevant storage or use instructions. The same Commission guidance identifies milk and nuts, including almonds, among the allergens that must be declared when used as ingredients. For non-prepacked food, allergen information must also be available under the applicable route. The Spanish or EU-responsible food business should determine the exact obligations for its format and sales channel.

The team should also verify the status and labeling of the specific orange-blossom and almond flavor ingredients. The current consolidated Regulation (EC) No 1334/2008 sets the EU framework for flavourings and food ingredients with flavouring properties. XIAO TEA can provide accurate ingredient and specification information for the material it supplies; it cannot approve the buyer's complete gelato name, allergen statement, nutrition information, claims or final Spanish-language label without the full finished-product evidence and qualified local review.

Use two adjustment rounds to converge on one commercial target

Consolidate trial feedback by process checkpoint and requested outcome. 'Orange blossom is clear in liquid mix but disappears after hardening' is more useful than 'make it stronger'; 'almond dominates the tea finish at serving temperature' is more useful than asking for more matcha without checking sweetness and dose. After the first comparison, select the most viable direction or two, then use the included adjustment rounds to refine the agreed target rather than reopening the entire brief.

XIAO TEA's USD 1,000 development route covers up to five flavor directions, 50 g per flavor, international sample courier and two formula-adjustment rounds after sample receipt. If the project becomes a commercial order, USD 500 is credited against the goods payment. Commercial production starts at one metric ton per approved flavor. Final approval should therefore combine finished-product sensory fit, process execution, documentation, label handoff and a credible volume plan—without implying a customer result, factory validation or guaranteed performance that has not been documented for the specific project.

BEFORE FORMULA APPROVAL

Keep the conclusion tied to the tested application.

Commercial fees and scope reflect the current XIAO TEA offer. Application performance must be evaluated in the buyer's agreed product system. This page does not make an absolute claim about color, dispersion, stability, certification, regulatory status or production capacity.

RELATED QUESTIONS

Questions buyers ask next

Should orange-blossom almond flavored matcha be approved in the liquid gelato mix?

No. Liquid-mix evaluation is one checkpoint, but commercial approval should be based on the finished frozen product after the buyer's recorded hardening, storage and serving route.

Can one flavored-matcha sample cover both dairy and plant-based gelato?

Only after both bases are tested. They are different application matrices, so one result should not be assumed to transfer without a focused comparison.

Who is responsible for the finished Spanish or EU label?

XIAO TEA provides accurate ingredient and specification information for its supplied material. The responsible EU food business must review the complete formula, allergens, product name, nutrition information, claims and final label for the intended format and channel.

What commercial information should the gelato manufacturer include in the RFQ?

Include the market, finished format, base recipe and process route, almond and orange-blossom ingredients, target sensory profile, first volume per flavor, launch timing and the person responsible for final approval.
